* 2 c. ham, wafer thin sliced, or leftover sliced cooked ham
* 8 oz. can corn, drained, or one cup frozen corn
* 2 tsp. chili powder
* 2 c. shredded Cheddar cheese
* 8 flour tortillas
1. In a large bowl toss ham, corn, chili powder and cheese.
2. Heat 10" nonstick skillet over medium-high heat.
3. Place one flour tortilla in skillet; layer with about 1/2 c. of the ham mixture to within 1/2-in. of edge of tortilla. Top with another tortilla.
4. Cook over medium-high heat for 4 to 5 minutes, turning after 2 minutes, until light golden brown.
5. Remove Quesadillas from skillet and keep warm. Repeat with remaining tortillas and filling.
6. Cut Quesadillas into wedges to serve.
